Over this weekend, and after a lovely brunch celebrating the wonderful women in my life, I finally had the opportunity to plant our summer greens with my husband after recently expanding our garden beds by 30%!
I wanted to share with you why I grow so much food. I literally eat 10 cups of veggies a day and have been known to consume this in just one sitting! Why do choose I eat this way? My body loves it. Plain and simple. It feels good. I can eat a massive plate of food and feel amazing about it, and I feel even better knowing that I have grown this food myself!
What I love doing is selecting 10 cups of assorted lettuces from my garden, tossing it into a frying pan with coconut oil, throw in some small sweet tomatoes, green onions and chives (also from my garden), crack open a few local free range eggs and watch the magic happen. I then top it all off with a fresh avocado and some sweet chilli sauce or salsa. You can even add some organic and non-gmo taco chips!
The only truly sustainable way to eat this way is to grow your own greens all year round. Diet is such an important lifestyle modification to ensure that your body gets the nutrients it needs to function as optimally as possible. Our food is far less rich in nutrients than even just 100 years ago.
